City Chicken is truly a Northeast Ohio favorite. My Grandmother or as we called her "Nana" would make this dish and as a young kid hearing it called City Chicken I just figured it was. Remove the blueish skin membrane if it isn’t already gone. Cut length wise than cut that in 1-to-1 &1/2-inch pieces. *Next put largest chunk and work your way down the wooden skewer so it almost looks like a drumstick. *Make an egg-wash of 3 to 4 eggs, Wisk well add 1 teaspoon of water for each egg, don’t worry if you go heavier on the water. Wisk well again. *Mix a bread crumb, panko mix with even amounts, add season salt and pepper to mixture. Mix well. BREADING: *Start with a bowl big enough to take a skewer of meat and put sifted flour in it. Flour all the premade skewers of meat, shake off excess. *The Next step is to dip the flour coated skewers in the egg wash, let the excess egg-wash drip off. * Last breading step is to roll the egg-wash coated skewers in the panko/Bread crumb mix. Transfer to a tray and let sit for a half an hour if possible. *Once the skewers have had some time to sit, cook in a fryer at around 325 to 350. Do not let cook to long since you will burn the crumbs. You want the breading a light golden brown. *Transfer cooked skewers to a glass or ceramic baking dish. Line up nicely the skewers the best you can. *Boil 10 to 12 oz of water in a microwave add Chicken base to taste, it should taste like a good chicken broth. I always prefer Stouffers or Minors paste cubes are no fun and all salt. *Pour the well mixed chicken paste and water into baking the baking pan and cover with foil. Bake till the internal temperature is 165 degrees then serve with fresh cut lemons and enjoy.
